A refreshing, contemporary take on Japanese cuisine with an authentic reinterpretation unique to the Alberta market. Chef Darren MacLean, expresses Japanese food with a truly Canadian twist. Using the same philosophy of seasonality and locality found in Japan, Shokunin utilizes the best ingredients found right in our own backyards and prepares this bounty using traditional Japanese methods. The menu features small plates, cooked over binchotan grills fuelled by traditional hardwood coals made of ubame oak that create a unique flavour and aroma.
