Fallentimber Meadery is the latest addition to the cottage winery industry in Alberta.  Our doors officially opened to the public in the fall of 2010.  

Great mead starts with great honey, and honey is something that the Ryan family knows very well. Back in 1969, Blake Ryan started the family business when he purchased the family farm and established his first hives.  Today, Blake's son Kevin is the owner and operator of Ryan's Honey which is sold at select stores in our region.  

Our honey is collected from hives placed along a narrow band at the eastern edge of the foothills.  This gives our bees access to a wide variety of wildflowers and clover that cover the hills, but limits their exposure to the expansive croplands to the east.  In addition to careful hive placement, our honey is meticulously handled, and never pasteurized, to ensure that it retains a natural, fresh from the comb flavour. The result is a honey that is among the best in the business; our honey consistently exceeds the highest grades of color, clarity and moisture content set out by Canadian Food Inspection Agency. All of our meads are produced with Ryan's Honey and that superior flavour comes through in every glass.    
As Fall draws to a close and Winter takes hold of southern Alberta, here at Fallentimber Meadery we're working on ways to make our products more accessible to our customers.  

For the market crowd, we are pleased to announce that we will be setting up a new semi-permanent outlet at the Kingsland Farmers' Market, which is scheduled to re-open on December 2nd.  This is an indoor market that runs year round Thursday through Sunday and will play host to some of southern Alberta's finest producers.  

Another key milestone for us will be the launch of our first three batches into local stores and restaurants.   We've been talking to a couple of Calgary's finest restaurants and we will be working with their chefs to help create the perfect pairings.  Keep an eye on our website for more information on upcoming features and events.   

For those of you looking for the perfect Christmas gift, we've also put together baskets that include Fallentimber Mead, Ryan's Honey and natural beeswax candles that are all made right here at our farm.  These are on sale now at the farm gate (which will remain open Saturday and Sunday through the winter) or by delivery if you pre-order.  

In the coming weeks we will also be releasing our much anticipated Saskatoon-Rhubarb and Cinnamon Meads, which will be available at the farm gate, farmers' market and by delivery.
